Now that it’s officially March, we’re all craving warm weather and that happy, relaxed atmosphere. If you don’t have time to sneak down to the Caribbean or to the Italian coast or some other escape to get your spring fix early, try one of these bitter aperitivi. In Italy, these drinks are consumed before the main meal and the bitterness helps awaken the appetite. So mix one up, take a sip and let yourself feel transported to a sunny piazza.

Campari Spritz

  • 3 parts chilled prosecco
  • 2 parts Campari
  • 1 part soda water
  1. Strip of orange rind or lemon rind to garnish
  2. Pour directly into a wine glass (oversized, if you want to be authentic), garnish and serve.

*If Campari is too bitter for your taste, try substituting Aperol (also from Italy) instead.

Negroni

  • 1 part Campari
  • 1 part gin (try Broker’s, if you can find it, or a London dry or Navy strength, if you can’t)
  • 1 part sweet (red) vermouth
  1. Strip of orange rind to garnish
  2. Pour directly into an Old Fashioned glass, stir and add rocks and garnish.

And, if you want an American twist, try:

Whiskey or rye Negroni

  • 1 part Campari
  • 1 part rye or bourbon
  • 1 part sweet (red) vermouth
  1. Strip of orange rind to garnish
  2. Pour directly into an Old Fashioned glass, stir and add rocks and garnish.
